Gluten Free Red Velvet Waffles

Prep Time 15 minutes

Ingredients

  • 3/4 cup almond milk
  • 1/2 banana
  • 1 cup gluten free flour- I used buckwheat
  • Heaped tsp baking powder
  • 3 tbsp Good Guru Good Berries Powder
  • Pinch salt
  • Dash vanilla extract
  • Heaped Tbsp cacao powder
  • Tbsp maple syrup
  • 1 whole egg
  • 1 egg white
  • 2 Tbsp olive oil
  • Cooking spray or coconut oil for cooking

Instructions

  • Mash the banana with the back of a fork and beat in the eggs, olive oil, maple syrup, vanilla and milk. In a mixing bowl, combine all of the dry ingredients and mix.
  • Fold the dry and wet ingredients together and beat until you’re left with a smooth mixture.
  • Preheat the waffle iron and once hot, spray with cooking spray or a light brush of coconut oil.
  • Pour on some of your waffle batter and cook according to the instructions on your machine. Repeat with the remaining mixture.
  • Serve with toppings of choice. I love to layer peanut butter and fresh berries here!
