Pop all of the ingredients, apart from the chocolate chips, into a blender and blitz until smooth.
Heat a little coconut oil in a non-stick frying pan over medium heat.
Once the pan is nice and hot, pour a little of the mixture in and allow to cook.
Once the pancake starts to bubble on the surface, flip and cook on the other side. Repeat until all of the batter is used up.
Serve your pancakes with toppings of choice and enjoy!
