Add your oats into a blender and blitz to form a fine flour. I've used a Nutribullet for this, which works well!
Gently melt the Biscoff spread and mix this in with your oat flour.
Use your hands to bring the mixture together to form a malleable dough. To make the pumpkins, roll the mixture into balls. You can make these all the same size or create different sizes, which I think looks nice for cake decorating!
Use a skewer to create the ridges along the sides of the balls all of the way around. Roll these in the cinnamon sugar to coat and place a chocolate chip in the centre of each!
