Winter spiced chocolate chip pancakes

Lazy mornings curled up on the sofa or in bed beneath a mountain of blankets in this chilly time of year calls for one breakfast in particular.. pancakes! Pancakes are the perfect breakfast treat for those mornings when you have a little more time to spend on cooking up something delicious! But these aren’t just any old ordinary pancakes.. with a gentle hint of festive mixed spices, natural sweetness from the banana and gooey melted chocolate chips, it really doesn’t get much better than that now does it?

Now, typically pancakes would be more of a weekend affair and admittedly, they do take a little longer to whip up than a speedy scrambled eggs and avo, but these are actually pretty simple to make and require a very minimal ingredients list. There’s actually no flour used in these whatsoever as i’ve used oats instead. The banana and egg help to bind everything together, whilst keeping the pancakes lovely and fluffy! Oats are such a staple ingredient in my breakfasts, so I try and include them on as many occasions as possible and not just porridge! They work really well in pancakes and are probably something that you already have in your kitchen cupboard.

Another flavour that really reminds me of all things Autumn, Winter and this festive time of year is definitely maple syrup! The taste, the smell.. just everything about it is perfect for pairing with festive sweet treats. Here i’ve mixed it with macadamia butter to create a really simple, yet absolutely delicious sauce to drizzle over the top of the pancakes. Macadamia butter is a fairly recent discovery for me and I’m hooked to the stuff! It’s probably most similar to cashew butter (which I ADORE) and is just so creamy with a slight natural sweetness.

Just to get into the festive spirit that little bit more, i’ve topped these with some fresh red currants and then of course.. more berries because I don’t seem to be able to have any sweet breakfast without them! I must say, cutting this pancake stack was a slightly challenging task as it was probably the tallest pancake tower that I’ve ever created. I opted for more smaller pancakes, but might have gone slightly overboard in this instance haha! You could always make slightly larger pancakes and make less of them.. it’s completely up to you. I’m sure they’ll probably taste the same either way!
