I seem to have developed a mild obsession with making three types of dish lately. All of which are: sweet, breakfast themed and can be doused in peanut butter, random sprinklings of chocolate or coconut and a tower of fresh berries and pomegranate seeds! Wait, obviously I forgot to mention the rose petals in there too.. which, you will almost definitely know, that I throw all over 90% of my dishes!
On a serious note, over the past week I’ve made countless different batches of protein pancakes, waffles and french toast dishes and I’m not even close to being done with this phase yet! I know I said breakfast themed, but really you can eat these at any time of day and they’re a nice way to switch up your standard bowl of protein porridge.
This French toast recipe is actually completely plant based and therefore made without any eggs whatsoever. I’ve used one of my current favourite vegan protein powders in the coconut flavour
Ingredients- Serves 2 people
- 1 cup plant based milk
- 1 scoop (about 10g) The Good Guru Vegan Coconut Protein
- Dash of ground cinnamon
- Agave/maple syrup to taste- optional
- Bread of choice- around 4 slices
- 1 ripe banana
- Coconut oil for cooking
- Toppings of choice- I used Chia seed Jam and peanut butter
Method
In a blender, combine the plant based milk, cinnamon and protein powder. You can also add in a little sweetener if you’d like here also.
Heat a tsp of coconut oil in a frying pan and bring to medium heat.
Pour the French toast mixture into a deep bowl/dish and soak each of the pieces of bread so that they’re completely coated. Add this into the pan and cook until golden brown on each side.
Meanwhile, slice the banana into coins and heat a tsp of coconut oil in a frying pan over medium-high heat. Place the banana slices into the pan and cook until beautifully caramelised on each side.
Stack your French toast and top with some berry chia jam and sliced banana pieces.
