The Best Chocolate Peanut Butter Granola

Back with yet another granola recipe that I can’t wait for you guys to try. I always go on about how much I love baking granola recipes- they’re definitely up there with one of my favourite things to make. I love experimenting with different flavour combinations and it’s a great way to use up whatever you have in the cupboard. There’s not real rules when it comes to granola and you can add in whatever nuts, seeds and dried fruit you fancy.

Chocolate & peanut butter are obviously a winning combination and one of my favourite things of all time. There’s sweetness, saltiness and a delicious addition of rich dark chocolate. This is such a quick and simple recipe to make and a great breakfast, dessert or snack to prep in advance for the week ahead.

My favourite ways to serve granola are with some hazelnut milk; then the milk goes all chocolatey and amazing.. or sprinkled over some fruit and yoghurt for added crunch! I love oats and they’re always an absolute staple ingredient in my store cupboard. They’re a great source of slow releasing carbs and fibre and something that I include in my diet and recipes on a daily basis. They’re also super affordable and are a great base ingredient for so many recipes!

This recipe is also completely dairy and refined sugar free; so is also suitable for vegans. It’s not a particularly Easter themed.. but would still make a pretty tasty Easter breakfast recipe or home made gift. Could also be a good way to use up any leftover Easter eggs that you might have lying around!

I need to get my skates on with Easter recipe creation now come to think of it- I’m somewhat slacking this year now I think about it! I feel like I’ve been in a bit of a mad rush with everything over the past 4 months and need about a two week free period to just get myself organised and catch up with life!

Ingredients

  • 40g vegan dark chocolate
  • 2 tbsp maple syrup
  • Tbsp coconut oil
  • 3 Tbsp smooth peanut butter
  • 2 1/2 cups jumbo oats
  • 1/2 cup flaked almonds
  • Pinch sea salt
  • 1/2 cup pumpkin seeds

Method

Preheat your oven to 180c and line a tray with baking paper.

Gently melt together the dark chocolate, coconut oil and peanut butter. Stir through the maple syrup.

In a mixing bowl, combine the dry ingredients. Pour oven the chocolate mixture and give everything a good stir so that everything is evenly coated.

pour the granola onto the baking sheet and cook in the oven for 15 minutes, tossing half way through to prevent burning.

Allow to cool completely, then store in an airtight container. Enjoy with your favourite plant based milks and some fresh fruit.
