It seems a little strange that even though I love olives and I LOVE hummus, that I haven’t actually combined the two until now. Making your own hummus at home is super quick and simple- plus it makes a much bigger batch from just one can of chickpeas than you would get in a regular tub. You can also add as much extra garlic as you like- which for a garlic monster like myself is a very important part!
The addition of the olives to this recipe add such an incredible depth of flavour. I find that they’re great to use when you feel like a recipe is just missing that little extra kick of flavour, but you just can’t quite put your finer on it! I love a good punchy, bold flavour and these definitely help to achieve that! I’m also obsessed with blending them into pasta sauces and mixing with salads, as I find they just really liven up the entire dish and take the flavours to that next level.
Smokey flavours and spices are pretty much one of my favourite things.. and I don’t think I actually ever really mention this. Smoked paprika is definitely my most frequently used and purchased spice because I just find that it goes well with pretty much everything! Okay, maybe that’s a slight exaggeration, but it’s delicious none the less.
Ingredients
- 1 can chickpeas
- Juice from 1/2 lemon
- Tbsp Olive Oil
- Clove garlic
- Sea salt and black pepper to taste
- 2 Tbsp Green Olives
- Tbsp light tahini
- Tsp smoked paprika
- Water as needed
Method
In a food processor, combine all of the ingredients and blend until smooth.
Gradually drizzle in the water until the hummus is super smooth and creamy!
Serve topped with extra olives and a good drizzle of olive oil.
