Ok so I seem to have a slight obsession with making hummus recipes recently. I’m actually getting pretty into savoury dishes in general to be honest.. but don’t worry, this doesn’t mean that the desserts will be stopping!
First of all, before we even get into the hummus recipe, I just HAVE to mention how good these sweet potato bites are. I really don’t talk about pre-made food or products that I’ve found In the supermarket all that much on here and I’m thinking that I probably should introduce this more. I always find it so interesting to see things that other people are loving and it’s a great way to discover different products that I wouldn’t normally buy. I love anything along the lines of veggie/falafel bites and these certainly did not disappoint. They’re great to have on hand in the freezer for when you want a quick snack or addition to a meal. Pre-made veggie and vegan food can, admittedly be a little hit and miss, especially when you make a lot of it yourself at home. That is something that I’ve found really affects the way I view products actually. I’m waaaaay more fussy when buying things and eating out nowadays. I remember when I first started eating a raw, vegan restaurants about 5 years ago and being absolutely spellbound by the array of raw chocolates and cheesecakes. I was literally obsessed. No joke. It just amazed me how such an extravagant creation could be made completely from wholesome ingredients like dates and nuts, yet taste so sweet and indulgent. Now however, being a bit of a raw cheesecake connoisseur.. I find that I’m always super picky when trying desserts in cafes or restaurants! Which, In a way is kinda nice because I know I’m going to be less likely to spend extortionate amounts of money on raw vegan cheesecake slices!
Seeing as it’s currently the start of the May Bank Holiday weekend here In the UK, I thought it would be the opportune time to share a few snacky & dip recipes on here in case you’re entertaining guests and need some inspiration for a few nibbles! I’m a huge fan of a good old snack selection and hummus is of course always a firm fave. My friend and I actually devoured this on a slightly tipsy girls night in a few weeks ago, so I can confirm, it goes down a treat to compliment a few G&T’s!
Ingredients
- 1 can chickpeas- drained and rinsed
- Tsp Smoked paprika
- Salt and pepper to taste
- Tbsp Light tahini
- Tbsp olive oil
- Large garlic clove
- Juice from 1 lemon
- 230g roasted red peppers (small jar)
- Water as needed
- 1 pack Vegable Sweet Potato Bites
Method
Cook the Vegable bites according to the instructions on the packet, then meanwhile you can get on with making the hummus.
To make the hummus, In a food processor, combine all of the above ingredients and blend until smooth and creamy. Add extra water to help blend if needed and adjust any seasonings to taste.
Serve along side the sweet potato bites and tuck in.
