Paleo Cranberry & Buckwheat Granola

I feel as though it’s been an age since I posted a new recipe on here for you guys.. which is very upsetting for me! I really have no excuses, other than the fact that life has simply taken over and I’ve just lost track of my time management and productivity skills. If you follow me on Instagram, then you’ll know that I moved house over the weekend, which just turns your life upside down for the most part. Don’t get me wrong, I love moving house and getting into a fresh, exciting new apartment.. but this does also come hand in hand with a great deal of work, stress and anxiety. This apartment is completely unfurnished and will be my first place that I’m able to really put my own stamp on and make my own special little home! We’re all completely in love with the new place and are impatiently waiting for all of the furniture deliveries to arrive. (I should note that I’m currently writing this whilst sat on an airbed in my living room!) 

This granola recipe is actually completely gluten and grain free, as I’ve used buckwheat groats instead of oats. Buckwheat, despite having ‘wheat’ in the name, is a type of seed and therefore a great alternative for people who follow a paleo diet. You can also get this in the form of buckwheat flakes to make porridge and flour for baking. It has a slightly nutty flavour and is great for substituting into recipes. 

Another thing that makes this that little bit extra special, is that it is in fact, berry flavoured! I could be wrong here, but I think berry flavoured granola can be quite hard to come across in the supermarkets and would probably be a pretty pricy purchase even if you did. Here I’ve used freeze dried cranberry powder from Arctic Berries and it works a treat! You guys will know these powders are always in my cupboard and I’ve loved this brand for years! We’ve been working together for over a year now and it was such an honour to be approached by a brand who I truly loved. They’ve also come in super handy over the past few days when I didn’t have any fresh food in the new place, as I could still get a sneaky portion of berries into my morning porridge, despite the fridge being rather sparse! They would also be great to take travelling with you or keep at work. 

I think I’ve kept you waiting for a new recipe for long enough, so here goes… 

Paleo Cranberry & Buckwheat Granola

Ingredients

  • 1 cup buckwheat groats
  • 1 tbsp coconut oil
  • 3 tbsp maple/rice syrup
  • Heaped Tbsp Arctic Berries Cranberry powder
  • 1/2 cup almonds- chopped Handful dried cranberries
  • Tbsp poppy seeds
  • Pinch sea salt

Instructions

  • Preheat your oven to 180c and line a tray with baking paper.
  • Combine all of the dry ingredients in a mixing bowl (apart from the berry powder)
  • Gently heat the coconut oil and stir through the sweetener and berry powder.
  • Pour this over the dry ingredients and mix well so that everything is evenly coated.
  • Spread the mixture onto your baking tray and pop this into the oven for around 15-18 minutes. Toss the granola half way through to prevent burning.
  • Once the granola is cooked, allow this to cool completely and form nice clusters before storing in an airtight jar/ container.
  • Serve with plant milk, yoghurt or simply enjoy by itself!
