Mince Pie Apple Crumble

When I think of the ultimate wintery dessert, apple crumble jut always comes to mind. I just love everything about it and I don’t think I’ve ever had a coy Christmas dinner without a scrumptious bowl full of crumble and ice cream for afters. This is an extra festive addition, as I’ve added in lots of festive spices and raisins to give it that mince pie feel. I actually used to hate mince pies growing up and would just pick off the bits of pastry from the top and outside. Since starting to make my own and get more creative with flavour combinations, I now absolutely love them. I usually add in lots of fresh orange juice, dried cranberries and chopped apples- it’s a nice change from the regular mince meat fillings. 

So, when it comes to crumble, for me, the most important part is getting that crumble to filling ratio just right. There needs to be a very generous amount of delicious crumble topping in my opinion.. it’s pretty much the best bit! I tend to make mine with a combination of rolled oats and oat flour for extra crunch and texture. 

Plus.. as if this wasn’t already delicious enough, I’ve added in a cheeky salted caramel cashew butter sauce to top everything off! This is literally one of the most simple, yet delicious staple recipes that you NEED in your life. It works well with pretty much everything. Not even joking. Desserts, smoothie bowls, smoothies, toast or just straight from the spoon. It honestly couldn’t be much simpler to make and takes in-credible. 

This is one of the first properly Christmas themed recipes to go up onto the blog this year and I couldn’t be more excited about all of the festivities! I absolutely adore this time of year- it’s always been my favourite and I’ve already had my tree up for about 3 weeks now! I just love how all of the decorations and festive spirit leaves everyone feeling so happy and cheerful. It’s such a social time of year with so many amazing events going on! 

Mince Pie Apple Crumble

Ingredients

  • 3 jazz apples 
  • Tbsp honey 
  • Large Handful raisins 
  • Tsp ground cinnamon 
  • 1/2 tsp ground ginger 

Topping:

  • 2 Tbsp vegan butter 
  • 2 Tbsp honey 
  • 1/2 tsp ground cinnamon 
  • Pinch Pink Himalayan salt 
  • 1 cup oat flour 
  • 1/2 cup rolled jumbo oats 

Sauce:

Instructions

  • Preheat your oven to 180c. 
  • Chop the apples into small, bite-sized chunks and add these into a pan with a little splash of water. Cook over a low to medium heat until nice and soft. Add in the spices and honey and allow these to cook. 
  • Add in the raisins and stir everything together. 
  • To make the crumble topping, combine all of the dry ingredients in a large mixing bowl, then combine this with the honey and vegan butter. Mix these together (I find using your hands works best here) to create a crumble like consistency. 
  • Once the apples are cooked, pour these into a baking dish and top with as much or as little crumble that you'd like. Place this into the oven to bake for around 15 minutes or until the crumble topping is nice and golden. 
  • Whilst this is cooking, to make the sauce, mix together the cashew butter, salt and honey until smooth. Gradually drizzle in the almond milk to create a pourable consistency, then set aside. 
  • Serve the crumble warm with some non-dairy ice cream/cream and a generous helping of the caramel sauce.
