Layered Berry & Vanilla Chia Oat Parfait

Layered chia puddings are great for spicing up your morning overnight oats and adding a variation of flavour and texture to your breakfast. Chia seeds are a great addition to your average bowl of oats, as they’re a good source of healthy plant based fats and also fibre. I love making chia puddings in large batches and addicting different ingredients to customise the flavours throughout the week. They’re great for prepping in advance and taking around with you on the go In a jar or Tupperware container.

I’ve kept the flavours here pretty fresh and simple, as I don’t alway fancy something too punchy first thing in the morning. The light, sweet flavours are great for the summer time and compliment some fresh berries or other fruit of choice beautifully. Obviously, the pretty purple colour is also a selling point for me here as well.

Ingredients- serves 2 people

  • 4 tbsp chia seeds
  • 1 cup plant based milk
  • 1-2 Tsp agave syrup
  • 1 cup jumbo oats
  • 1 cup plant based milk
  • Tbsp desiccated coconut
  • Tsp Arctic Berries Blackcurrant Powder

Method

To make the overnight oats, combine the oats, milk, a little sweetener to taste and the berry powder and mix well, then set aside.

For the chia pudding, mix together the chia seeds, milk and sweetener, then set aside for 20 minutes to allow to thicken.

Layer the oats and chia seed pudding into jars, then leave in the fridge for a couple of hours or overnight.

When ready to serve, add all of your favourite toppings and enjoy.
