Coconut Protein Overnight Oats

I’ve decided that Sunday is now going to be the day dedicated to meal prep and batch cooking recipes to get you ready for the week ahead. Overnight oats are one of my go-to breakfasts of choice when it comes to prepping the night before. They really couldn’t be more simple to throw together in a matter of minutes and taste like you’re tucking into a delicious pudding at breakfast time.

Oats are a great source of slow releasing carbs and fibre, so are something that I love to include into my breakfast most mornings. Porridge or overnight oats are usually my staple pre-workout meal and alway leaves me feeling energised and fuelled for a training session.

My fridge is always fully stocked with an array of non-dairy milks and recently I’ve been trying out Sproud Pea milk, which was a completely new discovery for me. They have both an original and barista variety; which is excellent in coffee! They’re so creamy and made with all natural ingredients. The consistency works really well in overnight oats, as it creates such a luxurious consistency so you feel like you’re enjoying a dessert for breakfast!

Ingredients

  • 1/2 cup jumbo oats
  • 3/4 cup Sproud Pea Milk
  • 1 scoop vegan vanilla protein
  • Tbsp desiccated coconut
  • Tsp agave syrup (if desired)
  • Tsp cashew butter

Method

To make the overnight oats, mix everything together in a bowl and leave to thicken in the fridge for an hour or overnight.

When ready to serve, add your favourite fruits and toppings of choice, then dig in and enjoy!
