Cinnamon Buckwheat Waffles

Ok, so we’re finally back to normal recipe routine after being slightly MIA over the past few weeks. I’ve been having a bit of a struggle to get back into my usual routine and really feel motivated over the last month and I think just needed a bit of time to really reset. However over the last week, I did have to spend the majority of the time in bed with a horrible virus, so I’ve actually really missed being able to just get ump and do those usual everyday tasks like get the food shopping and just walk the dog. Honestly, I feel like you appreciate life so much more after being stuck in bed ill for the best part of a week haha!

Anyway, first up on the menu for the Easter themed recipes just happened to be waffles. I had yet another kitchen rearrange the other day and rediscovered my beloved waffle maker that I’d somehow forgotten about! I used to make waffles ALL the time and they’re one of my favourite things to cook and photograph! The mixture can sometimes be a little trial and error to get that consistency just right, but I was SO impressed with how these ones turned out! The smell that fills the kitchen whilst these are cooking is just incredible! The warming scent of the cinnamon makes the kitchen smell like hot cross buns!

Speaking of those, I actually can’t believe how quickly this year is going and that we’re nearly at Easter already! I know most people (myself included) probably say this every year, but it doesn’t seem like a whole year ago since I was living in my old flat making last years Easter recipes! So much has changed and happened over the past 12 months, yet it still feels like the time has just flown by.

I think these could actually be the first waffles that I’ve made this year now that I think about it? I’m sure if I scroll through my Instagram feed I might find this to not actually be the case, but off the top of my head I can’t think of any. I think that will certainly need to change for the future going forward. More waffles for everyone! I was so happy with the result of these; the flavour and fluffy texture is everything I hoped they’d be! I was inspired to make something along the waffle or pancake line after re-stocking my ingredients cupboard yesterday and using some buckwheat flour. This is something that was always a staple in my kitchen, but I haven’t bought for quite a while now. It;’s a completely gluten free flour and has a really nice smooth texture and nutty undertones in the flavour. I do find that It can sometimes be a little tricky to bake with, as the texture ca be slightly heavy; but overall, I would recommend the stuff- especially if you’re gluten free!

You could also try mixing things up a little here and adding in some chocolate chips, or maybe even some currants for even more of a hot cross bun kinda’ vibe. I’ve kept the toppings super quick and simple here, but of course, you can get a little more fancy with those too! I love a good drizzle of maple syrup though- that’s a must!

Ingredients- Serves 3 people

  • 1 cup buckwheat flour
  • 1/2 cup non-dairy milk
  • 2 whole eggs
  • Tsp baking powder
  • Tsp ground cinnamon
  • 2 Tbsp olive oil
  • 1 mashed banana
  • 2 Tbsp maple syrup
  • Pinch salt
  • Olive oil spray for cooking


Preheat your waffle maker.

To make the batter, start by beating together the eggs with the mashed banana until well combined.

Mix in the maple syrup, olive oil and then the non-dairy milk of choice.

Combine the dry ingredients and toss together. Pour in the wet mixture gradually whilst mixing until you’re left with a smooth waffle mixture.

Once the waffle maker is nice and hot, spray with a little of your olive oil spray and add some of your mixture.

Cook according to the instructions (usually takes around 3-4 minutes for me) and once the waffles are beautifully golden and crisp, remove and repeat this for the remaining mixture.

Serve with your favourite toppings and enjoy!
