I have to confess that I might have eaten a few too many of these whilst shooting them last week. However, this does mean that I can confirm that I’m a huge fan of this particular energy ball recipe and they do in fact, make the perfect work or pre-workout snack, if you’re looking for something quick and easy to grab.
Despite working from home all day, everyday, I often find myself reaching for something super speedy to throw together whilst rushing around the kitchen or back and forth from the supermarket. Obviously if I’ve made something that day, I can enjoy that for lunch, but I don’t always have the time to start cooking up a full meal from scratch. I’m on my feet 80% of the time during my working day and quick snack bites like these are ideal to give me a little boost of energy to keep powering through the day.
I love these because they’re really easy to just throw together and you don’t have to spend ages making sure that they look super neat and precise like decorating a raw cheesecake. They’re also really portable and easy to throw into a lunchbox to take with you out and about.
Ingredients
- 1 1/2 cups oats
- 1/2 cup pitted soft dates
- Tbsp coconut butter
- 2 Tbsp agave syrup
- 4 heaped Tbsp Pic’s Smooth Peanut butter
- 2 Tbsp desiccated coconut
- Dash ground cinnamon
- Handful chocolate chips
Method
In a food processor, add the oats and blend these for a couple of seconds to grind into a rough flour. prepAdd in all of the remaining ingredients, apart from the chocolate chips and blend
well until everything is well combined and sticks together.
You can add extra sweetener or peanut butter here if necessary.
Mix through the chocolate chips and roll the mixture into balls.
Pop these into the fridge for an hour to chill.
Decorate with some extra melted chocolate and enjoy!
