Chocolate Chunk Fudgey Protein Brownies

I was going to share this recipe only on Instagram, but decided that I would post it on here instead because I feel like that’s a bit easier to find for people in the future. I love baking in my spare time as well as for work and it’s always been something that I’ve done to de-stress and just zone out. I remember coming home from college and baking cakes after what back then, seemed like a stressful day. Just thinking about how stressful I used to think my life was back then is quite amusing actually!

Anyway, the other night I suddenly felt a sudden urge to get creative in the kitchen and obviously my housemates didn’t object to a freshly baked batch of chocolate brownies for a late night snack! I’m actually really glad that I live with other people at the moment because I’m not sure what I would do with all of the leftover food if I had no-one to share it with!

I used to make lots of protein based sweet treats and cakes, but it’s something that I appear to have neglected recently. I thought I’d attempt to get back on the horse and experiment with some new creations. You’ll probably know by now that brownies are one of my go-to’s and I’ve made countless different variations over the years. These ones are fairly decadent and have chunks of gooey protein bar and melted chocolate waiting in the centre.

Ingredients

  • 1/2 cup oat flour
  • 1/4 cup Barebells chocolate milkshake
  • 2 tbsp coconut oil
  • 18g chocolate whey protein powder
  • 3 tbsp smooth peanut butter
  • 3 heaped tbsp maple syrup
  • 3 tbsp raw cacao powder
  • 40g dark chocolate
  • 1 whole egg
  • 1 egg white
  • Pinch sea salt
  • Handful chopped dark chocolate
  • 1 protein bar of choice- I used Barebells

Method

Preheat your oven to 180c and line a brownie tray with grease proof paper.

In a mixing bowl, cream together the peanut butter, coconut oil and maple syrup until well combined. Then, beat in the egg and egg whites, then add the milkshake.

Melt the chocolate and stir this through the wet ingredients.

Next, fold in all of the dry ingredients until you’re left with a smooth brownie batter.

Break the protein bar into small chunks and stir this through the mixture along with the raw chocolate.

Pour the mixture into the brownie tin and pop into the oven for 13-15 minutes to bake.

Remove and allow to cool before slicing into portions.
