I’m a little slow off the mark getting pancake recipes up this year, with only two days to go until the big day! There are lots of other pancake recipes already on the blog, so if these ones aren’t your thing, then there might be something else that takes your fancy. I’ve made a variety of flavours and vegan/non vegan varieties so just search pancakes and browse away! I still haven’t decided what I’m going to be making for myself this Shrove Tuesday.. I was thinking maybe a different style of pancakes for every meal. So, some could be savoury, some sweet and have a mixture of crepes and American style pancakes. I’m getting excited just thinking about my Tuesday food diary now! Ooh and I could make a variety of different coloured pancakes too.. or maybe a rainbow stack?! So many ideas and it’s 10pm in the evening now haha, isn’t that always just the way?
Like with most of my pancake recipes, I like to keep things pretty quick and simple to minimise any faffing about in the morning. Therefore.. no excuse for not making yourself some pancakes this Tuesday morning! You could also serve these up for a sweet afternoon snack or tasty dessert, topped with some coconut cream or ice cream.
They’re naturally sweet from the banana, fluffy and laden with beautiful oozing, melted chocolate chips in each bite! I wanted these to channel those choc chip cookie dough kinda’ vibes but in pancake form, as I’m a little bit obsessed with making cookie dough dishes lately. I’ve been experimenting with a few baked cookie dough recipes lately and I just love the soft, gooey texture combined with bursts of rich, melting chocolate! I think that cookie dough might just be one of the most delicious dessert dishes ever created.. and there are so many amazing flavour varieties just waiting to be rustled up!
Like with most of the recipes on here, these pancakes are gluten free, as I’ve used oat flour (which you can make yourself by grinding up oats). They’re also naturally sweetened from the banana, which also gives them a really moist and fluffy texture. After all, no one wants dry and chewy pancakes do they? Pancakes ought to be light, fluffy delicious little pillows of deliciousness!
Chocolate Chip Oat Flour Pancakes
Ingredients
- 3/4 cup oat flour
- 1 ripe banana
- 1/2 cup almond milk
- 1 egg
- Tsp baking powder
- Pinch salt
- Handful dark chocolate chips
- Coconut oil for cooking
Instructions
- Pop all of the ingredients, apart from the chocolate chips, into a blender and blitz until smooth.
- Heat a little coconut oil in a non-stick frying pan over medium heat.
- Once the pan is nice and hot, pour a little of the mixture in and allow to cook.
- Once the pancake starts to bubble on the surface, flip and cook on the other side. Repeat until all of the batter is used up.
- Serve your pancakes with toppings of choice and enjoy!
