I used to make my own nut butters all of the time and had actually started to get quite creative with the flavour combinations. If you have a powerful food processor (I used a Magimix) then it’s honestly such a simple process; you just had to add everything into the processor and blend until smooth and creamy. This is such a dreamy combination, I simply can’t get enough of it! The cashews and coconut add a delicious subtle sweetness and then you get that unique nuttiness from the pistachios and of course, that gorgeous green colour too!
In case you didn’t already know this, I would classify myself as somewhat of a nut butter fanatic. Like I literally love the stuff. You can enjoy it with almost anything, whether that be sweet or savoury and it just spices up your dishes to make everything like 10x more delicious! Some of my favourite pairings for nut butter would have to be: porridge, smoothie bowls, rice cakes, toast, bananas and then there’s one of the best combinations of all.. just straight off the spoon! Yep, I have definitely stood spooning nut butter straight from the jar on many an occasion. Which, now I think about it, it’s a little bit strange to be so obsessed with something like nut butter. Like.. we’re not talking about popcorn, ice cream or chocolates here. When I was younger, nut butter would just be something that I would casually spread onto toast and then that would be that. It wasn’t something that I would just dream of diving into or like eating on it’s own?! It’s funny how our tastebuds and taste in food changes over the years haha.
When making your nut butter, you can roast the nuts before hand if you have time, as this gives you that really nice toasted flavour and also I find that this helps everything to blend a little easier. It does take a little while to reach that super smooth consistency, but just be patient and keep on blending and it will be so worth it! I find that homemade nut butters always have a much smoother, pourable consistency than the shop bought ones and you can customise the flavours to create your perfect combination! They’re also often more cost effective to make yourself because shop bought nut butters (especially the flavoured ones) can be pretty pricy.
Cashew, Coconut & Pistachio Butter
Ingredients
- 1/2 cup cashew nuts
- 1/2 cup shelled pistachios
- 1/2 cup desiccated coconut
- Tsp vanilla powder
- Pinch salt
Instructions
- Place all of the ingredients into a high powered blender or food processor and blend until smooth and creamy.
- You might need to pause the blender and scrape down the sides part way through.
- Once you're left with a super creamy consistency, pour this into an airtight jar and store in a cool place. Enjoy on toast, porridge, yoghurt or just by itself!
