Carrot Cake Overnight Oats

This is going to be the first of many carrot cake themed recipes appearing on the blog because I might have become a little bit obsessed with this flavour combination! I’ve always been a huge carrot cake fan since being a child.. although then I think that the buttercream icing was definitely my favourite part! I also think that the flavours are just perfect for this time of year, as the spices are just so warming and make me feel so festive and cosy! Baking spiced goods is also one of my FAVOURITE things because it fills the home with the most delicious smells and gets me feeling really Autumnal and excited for the festive season to begin! I’m literally so obsessed with Christmas and any sort of festive celebration really, so obviously I get a bit over-excited around this time of year! 

I think that’s probably enough of me going on about my love for Christmas.. I need to keep reminding myself that we’re still in October! Something else that I love is also Overnight Oats. I’ve been obsessed with porridge for the last 5 years and I’ve definitely lost track of the amount of different flavour combinations and recipes that I’ve experimented with! It’s without a doubt, my favourite meal of all time and the best thing is; you can actually enjoy it at any time of day. Breakfast, lunch, snacks or dinner? Porridge is just the one! Oats are a great source of fibre and are one of my favourite carbs for pre and post workout as well. Oh.. and the best part of making any sort of oat concoction is obviously the array of toppings that you cab slather on top! My go-to favourites would have to be nut butter (of course), fresh fruit and dark chocolate. Chocolate is a good one for hot porridge bowls, as it’s goes all melty and delicious! 

Overnight oats are perfect for a weekday breakfast, as you can make it the night before and have something ready to grab and go in the morning. You could also add in some protein powder, if you wanted to increase the protein content of the recipe as well. I like to do this if I’m having these post-workout. Another great thing, is that these are super quick and simple to make; you just have to combine everything together in a bowl, give it a mix and leave in the fridge to thicken overnight! 

This recipe is also completely plant based and therefore dairy free. I always have a selection of plant milks in my fridge at all times and my current favourite is coconut milk. I love how creamy the consistency with and it has a subtle hint of natural sweetness that works really well in porridge and overnight oat recipes. Here I’ve used this one from Vita Coco and I’ve been loving including it in both sweet and savoury recipes (which you’ll be seeing very soon!). 

Carrot Cake Overnight Oats

Ingredients

  • 1 ripe banana- mashed 
  • Tsp mixed spice
  • Handful raisins 
  • 1 cup jumbo oats 
  • Tbsp maple syrup 
  • Handful chopped pecan nuts 
  • 1 cup Vita Coco Coconut milk
  • 1 medium carrot- grated

Instructions

  • Combine all of the ingredients in a mixing bowl and stir everything together. 
  • Pop this into the fridge for a few hours, or overnight to allow the mixture to thicken. 
  • Serve with toppings of choice or transfer into a tupperware to take on the go with you.
