Apple & Berry Crumble Oatmeal

I feel like recently I’ve been very heavily focussed on breakfast and dessert recipes.. in fact, I think that maybe I’m always focussed on breakfast and desserts haha! I have been thinking that I am going to start including a lot more savoury dishes during the next coming months, so if savoury is your thing, then just hang in there! For now.. I want to share with you this extra special porridge recipe! I don’t know about you, but I LOVE porridge, in both the Summer and Winter months. In fact, it really doesn’t matter what time of year or day it is, I’ll always be eager to tuck into a huge, steaming hot bowl of oats. Of course, I garnish these with an array of delicious toppings, which often includes fresh berries and dark chocolate! 

With this particular oatmeal bowl, I’ve gone with a slightly festive kinda’ theme inspired by a fruit crumble! Crumble is the ultimate Autumn/Winter dessert in my opinion- it’s a great dish to batch cook, to feed the whole family and even have some left over for breakfast the next day! This is a slightly healthier and definitely more of a short cut twist on a crumble dish; yet still absolutely delicious and a truly indulgent breakfast treat! The base of the dish is a super creamy, apple and blueberry infused porridge bowl, with gooey chunks of warm fruit; then topped with a crisp pat crumble layer, providing you with crunch in every mouthful! If you feel like being extra fancy, you could then of course add a drizzle of almond butter, some coconut yoghurt or even a square of dark chocolate! The great thing about the crumble topping, is that you can prep this in batches, so all you need to do in the morning is cook up your porridge bowl and you’re good to go! 

I’ve also just realised, that this is yet another recipe using apples! If you read my previous recipe post- which involves CAKE (if not you can see it here), then you’ll know that pumpkin has not been replaced with apple haha! I tend to get a little bit obsessed with certain ingredients.. especially seasonal ones, as I just love seasonal cooking! It’s such a great way to make the most of all of the wonderful fresh produce and is also often a good way to make your food shopping more affordable. I’ve been trying to insure that I include lots of fruits and vegetables into my diet lately, to top on my vitamins and hopefully ward off any winter colds, now the weather has suddenly become freezing here in London! After a long period of following a meal plan and concentrating on macros, I do tend to notice that I’m perhaps not eating as many micros as I would usually like and I do feel that my body feels better when I’m getting lots of fruits and veggies into my daily meals. Recipes like this make doing so really easy, delicious and effortless; and I’ve even added in some of my favourite Arctic Berries powder for even more berry goodness!
