Mash the banana into a puree, then whisk in the egg and milk.
Add in all of the dry ingredients and mix well until you're left with a smooth batter.
Preheat your waffle iron until nice and hot then grease with a little coconut oil. Pour in a little of the waffle mixture- I just filled the centre of the waffle maker to create smaller waffles, but you can make whatever shape you fancy. Cook for a few minutes, until golden and fluffy.
Repeat the process with the remaining mixture. Stack your waffles and add toppings of choice.
