Smokey Vegan Bean Burgers

So today I was just thinking, Summer is starting to come to an end and soon the blog will be filling with an abundance of Autumnal recipes and pumpkin themed treats! I thought I should probably make the most of the Summer themed meals and what better way to round off the season that with some home-made burgers that you can cook on the BBQ! These don’t just have to be for Summer, in fact, they’d be delicious all year round and you can cook them in a frying pan instead. 

The recipe is completely plant based, with the main ingredient being kidney beans. Since introducing a lot more vegan meals into my routine, I’ve been making an effort to include more beans and pulses. These are great sources of fibre and also plant based protein. Not to mention, they’re so inexpensive and can be added into an abundance of different recipes. They’re great in salads, stews, curries, stir fries, soups, dips.. I could go on!

For the particular recipe, I’ve teamed up with Jack Daniel’s to try out their new range of BBQ sauces. This adds an incredible depth of flavour to the burgers, with the perfect hint of sweet and smokiness. I was very pleasantly surprised to discover that some of the products in the range of sauces are in fact suitable for vegans and can’t wait to experiment with even more recipes! They’re such a quick and simple way to really spice up a dish and pack in a load of flavour with very little faff! 

Here I’ve layered the burger with all of the plant based deliciousness! Of course we have some sliced avocado, hummus and some delicious home made crispy onion rings! (Simply slice a red  onion and fry off with a little olive oil and cornflour.) I’ve also opted for a seeded bagel thin in place of a regular burger bun, but feel free to use whatever takes your fancy! 

Smokey Vegan Bean Burgers

Ingredients

  • 1 can kidney beans- drained and rinsed 
  • 1 small red onion- diced 
  • 1 crushed garlic clove 
  • Tbsp Jack Daniels BBQ Sauce 
  • 1 medium carrot- grated 
  • Pinch of sea salt and pepper 
  • 1/2 cup oat flour 
  • Pinch of smoked paprika 
  • Pinch of chilli flakes 
  • Olive or coconut oil for cooking 
  • Extra BBQ sauce for cooking 

Instructions

  • Place all of the ingredients into a food processor and pulse until everything is well combined and forms a chunky, mush like mixture. You don't want to completely puree everything, so be careful not to over blend. 
  • Mould the mixture into burger patties- I made around 6 but this may vary depending on the size of your burgers. 
  • Heat a little olive or coconut oil in a pan over medium heat. Once the pan is nice and hot, add in your burgers and cook until golden and crispy on both sides. 
  • Once the burgers are ready and piping hot on the inside, spoon over a little extra of the BBQ sauce and let this caramelise on both sides of the patties.
  • Serve with toppings and bread of choice and dig in!
