Wild Blueberry & Coconut Milk

Whilst there are now lots of different kinds of plant based milks available on the market, I still really enjoy making my own and experimenting with different combinations at home. It’s fairly quick and simple and you’re able to decide exactly what goes into it. There are lots of incredible brands available that make milks using only a few, natural ingredients. Making your own milks at home is an easy way to achieve this, without having for fork out for really pricy plant based milks. It also saves on extra packaging and plastic too! I’m slowly but surely making a conscious effort to try and be more eco-friendly!

One of my favourite nut milks is definitely coconut, as I just find this to have a really mild, slightly sweet flavour and super smooth & creamy texture. It’s great in coffee, smoothies, porridge or just on it’s own. I like almond milk, but I find coconut just generally has a nicer flavour. This is a bit of a cheats coconut milk, as I’ve used the cream from a can. By blending this with water, it skips the step of having to soak nuts or blend for ages and drain to achieve a smooth consistency. Alls you have to do with this one is simple blend and you’re good to go! 

This milk has a slightly fruity twist from the addition of Arctic Berries Wild Blueberry powder. I don’t need to tell you again how much I love these powders, I feel like I go on about it all the time; but I generally do love them so much! Adding them into this milk gives it a really fresh, summery flavour that’s great for serving with granola, adding to smoothies or just as a drink. 

Wild Blueberry & Coconut Milk

Ingredients

  • 1/2 cup thick coconut milk canned
  • 1 1/2 cup filtered water
  • Tbsp maple syrup
  • Tbsp Arctic Berries Blueberry Powder

Instructions

  • Pop all of the ingredients into your blender and blend until everything is fully combined and you’re left with a beautiful blue colour.
  • Pour into a bottle and store in the fridge for up to a couple of days.
  • This is delicious poured over cereal, mixed into smoothies, with some cookies dunked In, or simple on it’s own!
