It’s time for one thing.. WAFFLES! What better dish could you wake up to on a chilly wintery morning, than a heaped stack of sweet chocolate waffles topped with maple syrup, banana and ice cream?! I mean, who wouldn’t want a bite of that?
These waffles are super sweet, fluffy, with a hint of chocolatey flavour and the perfect sweet treat to kickstart your morning. They’re slightly different from most of my other waffle recipes because this time, I’ve experimented with coconut flour, which wouldn’t normally be my first choice to be honest. Coconut flour is really rather unique in comparison to most other flours, in terms of both texture and taste. As you would expect, it does indeed have a coconutty undertone to it, which works really well in baked goods and sweet recipes like this one. It’s super absorbent and often requires more eggs or ingredients to provide extra moisture than traditional recipes. It soaks up a lot of the moisture, so if you’re not careful it can end up being a little drying. The added banana works really well in this recipe to prevent this and also adds a delicious extra hint of natural sweetness.
Here I’ve kept things pretty simple flavour wise and opted for a fail-safe chocolate! I mean.. everyone likes chocolate right? But you can feel free to get creative and experiment with some different flavour options. Some flavours that I definitely want to try out in the future:
Mint chocolate chip
Cinnamon banana
Red Velvet
Lemon & coconut
I think I shall leave it there because otherwise we’ll be here all week! That has left me feeling very inspired to get creative with my waffle and pancake flavour combinations in the future though.. so expect some more of those coming your way very soon!
Oh and.. I’ve just remembered that it’s Mother’s Day this weekend and these would be the PERFECT breakfast in bed to serve for your mum! Add some beautiful fresh fruit and flowers and you’re all set! I never actually made my Mum breakfast in bed 1. because she doesn’t like to eat food in her room and 2. she doesn’t really like to eat as soon as she wakes up, but instead always has two cups of tea without fail. But in bed or not, I’m sure your mum would appreciate this!
Choc Banana Coconut Flour Waffles
Ingredients
- 1 banana
- 2 tbsp coconut flour
- 1 scoop vanilla whey protein about 30g
- 1/2 cup coconut milk
- 1 whole egg
- Tsp baking powder
- Tbsp cacao powder
- Pinch salt
- Coconut oil for cooking
Instructions
- Mash the banana into a puree, then whisk in the egg and milk.
- Add in all of the dry ingredients and mix well until you're left with a smooth batter.
- Preheat your waffle iron until nice and hot then grease with a little coconut oil. Pour in a little of the waffle mixture- I just filled the centre of the waffle maker to create smaller waffles, but you can make whatever shape you fancy. Cook for a few minutes, until golden and fluffy.
- Repeat the process with the remaining mixture. Stack your waffles and add toppings of choice.
