I know I’m posting yet another carrot cake themed recipe, but this one is an absolute must try I promise you!
I’m really living up to the cliché that everyone seems to be baking banana bead during this self isolation period.. because honestly, over the past couple of weeks I think I’ve made about 4 different varieties. Banana bread is one of my favourite things to bake and I almost always have a bunch of over-ripe bananas that are just itching to be baked into something delicious! I also have a slight obsession with carrot cake flavoured desserts it seems. I love the flavour and also extra moisture that they add into bakes, which works perfectly in this loaf.
I can see why people are going to banana bread crazy at the moment though. They’re the ideal thing to throw together if you’re looking for a quick and simple bake that you can serve for a sweet breakfast, with a cup of tea or tasty dessert. You don’t need lots of fancy equipment- this is a one bowl recipe and I’ve also been freezing mine, so that I’m well stocked up just incase!
Again, I’ve tried to make sure that this recipe uses mainly store cupboard staples and doesn’t have a never ending list of unusual ingredients. It’s also completely gluten, dairy and refined sugar free.
