I was planning on sharing this recipe at the start of next week, but as it turns out, I just couldn’t wait until then.
I’ve had many attempts at making the perfect vegan crepes and pancakes in the past, which more often than not, result in a pile of mushy or very crumbly pancake like creations that don’t exactly resemble a dreamy Sunday morning breakfast. They’re certainly not something picturesque enough to share on the internet either, that’s for sure.
Luckily, these crepes are none of those things. They hold together perfectly, they’re sweet, chocolatey, not too gooey and are super easy to make as well. I have however used regular plain flower for this, so I’m not sure how the recipe would work with substituting a GF flour blend- maybe this is something that I will experiment with.
For the first time ever, my view going into the new year isn’t that I will only be consuming green things and cutting out sweet treats for the next couple of months after all of the Christmas feasting. Yes, I’m not going to sit around munching open sharing sized packets of popcorn and selection boxes, however I definitely don’t want to wave goodbye to all things sweet and chocolatey.
These are the perfect weekend breakfast for a lazy morning lounging around in bed with a cup of coffee. They’re delicious filled with fresh berries, coconut yoghurt or maybe with some jam & peanut butter. You could also save some to take with you for an on the go breakfast pancake wrap during the week.
