I’d like to introduce you to one of my favourite snacks. I love anything remotely citrus flavoured and key lime pie was one of my absolute food true loves growing up. Not even exsagerating here, I could demolish a whole pie to myself if need be. As much as I love chocolate and would certainly not turn down a gooey slice of frosted chocolate gateau right now, I’ll always choose something zingy and fruity first!
These are super easy to make, a source of plant based protein and great for super quick snacking when that afternoon hunger strikes. They’re completely plant based and made with only a few simple, natural ingredients. I love to prep a big batch of things like this to keep stored in the fridge for whenever I need to grab something in the midst of recipe testing chaos or running out to the gym!
The protein powder that I’ve used here is actually a new one that I’ve been trialling out and that I really wanted to mention! I’ve been eager to try the Vega proteins for ages now and am honestly so impressed! I’m a huge lover of vegan proteins, simply because I really like the texture and I used plant based proteins far before I ever tried whey protein. The texture of this particular one is really smooth and blends so nicely into smoothies, oats and sweet treat recipes! I think both the vanilla and chocolate flavour are so delicious and I love the fact that these have added nutrients from fruit and veggies! They’re made from all natural ingredients and don’t taste overly artificial.
Ingredients
- 2 scoops Vega Essentials Nutritional Powder (Vanilla)
- 1/2 cup oats
- 1/2 cup desiccated coconut
- 1/2 cup soft pitted dates
- Juice and zest from one lime
- 2 Tbsp cashew butter
- 1 Tbsp coconut oil
- 1-2 Tbsp agave syrup
Method
In a food processor, combine all of the ingredients and blitz until everything sticks together. Add extra syrup or coconut oil if you feel the mixture isn’t sticky enough.
Roll into balls and pop these into the freezer for a couple of hours to chill.
