These flapjack bars are literally my new favourite snack. They’re sweet, chewy and have delicious burst of juice blueberries and melted chocolate throughout. I’m a huge flapjack fan and these make a great on-the go snack or cheeky breakfast option! They’re pretty simple to make and don’t require lots of fancy equipment or ingredients. Most of these things I would typically have in my kitchen already and all you’ll need to make them is a mixing bowl and wooden spoon! I love all of my techy kitchen gadgets, but sometimes it’s nice to keep things simple!
I’ve been getting back into my protein baking recently as well. I found myself harbouring an extensive collection of various different protein powders and. just was’t even making a dent in them. I love a good bowl of protein porridge or smoothie.. but other than that they were all getting a bit neglected! I decided that I would re-ignite my passion for making protein treats and I’ve been really enjoying it. Even though I do generally track my macros at the moment, I’m not big on calculating all of the macros and calories for all of my desserts etc.. but I have been thinking of maybe starting some sort of macro friendly food series? I’ll have a little think and maybe get the ball rolling next month!
I’m lucky enough that because I work from home, I can pretty much cook up meals as and when I need them; but I know for lots of people this just isn’t the case and prepping in advance can be key to staying on track. I’m a bit of a snacker, so having healthy things ready and waiting for me is a greta help. At the moment my go-to’s are yoghurt, frozen berries and nut butter, protein smoothies, roasted veggies with ketchup (sounds a it odd I know) or some sort of snack/protein bar. The buying ready packed snacks from the shops, this can actually be a little pricey, so making your own at home is a great alternative! Plus, these don’t take that much time at all, so it’s well worth it!
Ingredients
- 2 mashed bananas
- 2 Tbsp maple syrup
- 2 Tbsp Pic’s Peanut butter
- 20g vanilla whey protein
- Tbsp coconut oil
- 2 cups oats
- 1 large egg
- Tsp baking powder
- Pinch salt
- 80g blueberries
- Handful of your favourite vegan chocolate
Method
Preheat your oven to 180c and line a tray with baking paper.
In a bowl, combine the mashed banana, coconut oil and maple syrup and cream these together.
Beat in both of the eggs until everything is well combined.
Fold through the dry ingredients, then add in the blueberries.
Transfer into the baking dish and smooth over the surface. Top with your favourite chocolate and bake in the oven for 15-20 minutes.
Allow to cool slightly, then slice into squares.
