Mango & Coconut Protein Porridge

This is not a statement that I would say lightly, but I think that this might just be the best protein porridge that I’ve ever made in my life. I know. Bold statement. It’s currently 6am on a Sunday morning as I’m sitting here writing this post; I’ve actually been awake since 4am this morning for some unknown reason. I decided to have a pretty early night last night and for some reason that always means that I wake up waaaay to early! I do really enjoy being an early riser though, as I find that I get so much more done.

Anyway, porridge chats now because I don’t really have a lot of time to be side tracked today. I must confess, I started writing this post on a different day.. so it’s now the following Monday. I’m currently feeling very accomplished, sitting at my table with a batch of laundry in the washing machine and a nice face mask on to give me a little bit of pampering!

This porridge was created on a bit of a whim and actually turned out to be surprisingly delicious! I love mangos- they’re without a doubt one of my favourite fruits and work so well when paired with the coconut milk and vanilla. These oats are super sweet, fruity and creamy; as well as being an ideal nutritional combo to kickstart your day or enjoy pre and post workout.

I’ve actually used a whey protein here, but you can always swap this out got vegan options If you’d prefer. I don’t tend to consume a lot of whey or dairy products in general in my diet, however, sometimes I do like how fluffy it makes the porridge or baked goods. The flavour of this one by the Good Guru is probably one of my favourites, because I don’t find that it tastes really artificially sweetened or too intense!

Ingredients

  • 3/4 cup oats
  • 1 cup water
  • 1 cup coconut milk
  • 2 tbsp coconut chips
  • 1/2 ripe mango
  • 30g Good Guru Vanilla Whey Protein

Method

Place the oats into a sauce pan with the coconut milk and water and heat over a low to medium heat. Cook until thickened and creamy. 

Chop the mango into small pieces and stir these through the oats. 

Mix the protein with a little cold water to form a smooth mixture (this will stop the porridge going lumpy) then stir this through the porridge so that it goes all nice and fluffy!

Stir in the coconut chips, then serve into bowls and enjoy!
