When it comes to cookies, we all have our different preferences on texture.. and flavour of course. Some people prefer more of a crunchy, crisp texture like a biscuit and others like that super soft, gooey centre that just melts in the mouth. I’m definitely more of a fan of the second option, especially when they’re still warm and there’s lots of delicious melted chocolate chips oozing out!
These cookies really couldn’t be much more simple if they tried. All you’ll need are these 4 basic ingredients and someone to help you eat the cookies! They’re also gluten, dairy and refined sugar free.. oh and completely flourless and vegan! I know putting chickpeas in cookies seems a little bit of a strange idea, but you can’t taste them at all, I promise! They help to create that soft, fudgey texture and and are a great source of fibre and plant protein. I’m loving experimenting with different veggie and vegan recipes lately and chickpeas have become a firm favourite in my diet. I mean, they’re they key ingredient in hummus, so that alone is a pretty great reason to love them!
Like I was saying earlier, these are literally so quick and easy to make, you could probably do it with your eyes closed! You simply need to blend up the chickpeas, dates and peanut butter, stir through the chocolate chips and mould them into cookies ready for the oven! I would personally recommend tucking into them whilst they’re still a little bit warm, so the chocolate stays nice and gooey. Paired with some delicious coconut ice cream, these make for the perfect sweet snack or after dinner treat!
Oh, one more thing that I wanted to mention was the chocolate that I’ve used in this recipe. It’s from a brand called Mia, which I am currently so obsessed with! They have an incredible range of mouthwatering flavours (I think my favourite would currently be the one with candied orange- SO tasty!) and the packaging and chocolate bars are just so beautiful! Over the past couple of years, I’ve become somewhat of a chocaholic and would consider myself a bit of a connoisseur in the area. I actually now really enjoy 90% cacao chocolates, which I would have previously found far too bitter; It’s so interesting how our tastebuds alter.
So.. with chocolate and all things cookie on the brain, let’s get baking these little beauties shall we?!
4 Ingredient Chocolate Chunk Cookies
Ingredients
- 3/4 can cooked chickpeas- drained and rinsed
- 3 tbsp smooth cashew/peanut butter
- 1/2 cup pitted dates
- Handful Chopped dark chocolate
Instructions
- Preheat your oven to 180c and line a tray with baking paper.
- In a food processor, combine the chickpeas, nut butter and dates and blitz until really smooth and creamy.
- Stir through your chocolate chunks, then spoon dollops of the mixture onto your baking sheet. The batter is rather sticky, so you might want to use two spoons or damp hands to form into cookie like shapes.
- Bake these in the oven for around 13 minutes, then allow to cool slightly and firm up. Drizzle with a little melted chocolate if you desire and dig in!
