Vegan, No Bake Carrot Cake Bars With Berry Frosting

I’ve been so obsessed with everything carrot cake recently, which you’ll probably have noticed yourself by now. I get like that with food.. and quite a few other things as well to be honest. Once I find a flavour, or style of dish that I really love, I just can’t seem to stop experimenting with different variations. There’s been carrot cake banana loaf, carrot cake cupcakes, energy balls and now, I’m bringing you these raw carrot cake slices!

These bars make a fantastic work from home snack or afternoon treat to pair with a cup of tea. I don’t know about you, but I’m consuming a fair few snacks these days with being at home all of the time!

They’re both dairy and refined sugar free and can be stored in the freezer so you’ll always have a dreamy snack supply ready to go! Most of the ingredients here are shelf stable and things that I pretty much always have on hand in my kitchen. If you don’t have any lemons, then it’s not the end of the world.. however I can’t really say the same for the carrots, as they’re quite a key part to the recipe! But again, these are something that I almost always have in the fridge!

Not only are these bars totally delicious, but the frosting might just be my new favourite icing ever! It’s smooth, creamy, sweet and has an incredible, slightly sour fruity kick! I’ve added in some of my trusty Arctic Berries powder to create this gorgeous pink colour and provide that amazing berry flavour! Not only are these a great source of vitamins and striking berry flavour, but they’re also an amazing natural food colouring to add into baked goods, frostings and cheesecakes!
