Winter Berry Smoothie Bowl

Happy New Year everyone and welcome to the first post of the year! I don’t really know where to begin with this one really, as I feel like there’s been so much that I’m yet to update you guys on! 2018 was the year of some very big changes in my life. In fact, it was the year when I experienced the most changes ever when I come to think of it. Change has always been something that I’ve found to be incredibly challenging, as I’m a very sentimental person. However, change is a crucial part of life and I believe that it’s essential in order for us to really grow and develop as people. We’re always learning from our daily experiences and I feel like I’ve learned so much about myself and the things that I truly value in life throughout the past year. 

Anyway, I don’t want to ramble on about that for too long, as this is a recipe post so you’re really here to hear more about the food let’s be honest! I would like to start working on more lifestyle and reflective posts in the future and share a little bit more about my personal life. 

Smoothie bowls are a super quick and easy breakfast to make either in the morning or the night before, plus you can pile them high with all of your favourite toppings. I love to add fresh berries and home made granola like I’ve done with this one. They make it so easy to cram your breakfast full of micronutrients and start your day with a generous helping of fruits and veggies. 

I always make sure that my freezer is stocked up with frozen fruits like bananas, blueberries, raspberries and acai berry sachets. I find that this is a lot cheaper than buying all fresh produce and berries aren’t in season here in the UK at the moment. Berries are definitely my favourite kinds of fruit and are always a staple smoothie ingredient. Instead of my usual almond milk, here I’ve blended everything together with some coconut water for an added hint of sweetness. I also find that coconut water is great if I’m feeling dehydrated after training or if I’ve over done it a little with the coffee.

Ingredients

  • 1 frozen banana
  • 1 cup frozen blueberries
  • 100 ml Vita Coco Coconut water
  • Handful baby Spinach
  • Tsp Chia seeds
  • Dash vanilla powder
  • Handful fresh strawberries
  • Tsp Maca Powder

Instructions

  • Pop all of the ingredients into a blender and blitz until smooth and creamy. Add extra coconut water to help
  • blend if needed.
  • Pour into a bowl and garnish with all of your favourite toppings. Fresh berries, peanut butter and granola work
  • really well!
