Salted Almond Joy Granola

Yep, it’s another granola recipe.. but I don’t think I’ll ever get bored of experimenting with different granola flavour combos. It’s so quick and simple to throw together and the possibilities are just never ending?! I love granola for sprinkling over smoothie bowls, yoghurt or just simply to snack on. This is genuinely one of my favourite granola recipes of all time- honestly it’s THAT delicious.

It’s sweet, salty, crunchy and just dow right tasty. It’s also super simple and doesn’t require a never ending shopping list of ingredients. You’ll all probably be aware that I’m a huge nut butter fan- in fact, I’m low key obsessed with the stuff and always have one or more kitchen cupboard jam packed with various different jars. My favourites are actually just classic cashew and almond butters. I know you can get a wide variety of different fancy flavours, but I’m still a loyal fan of the originals.

This recipe is gluten, dairy and refined sugar free. For the vegan option, just be sure to swap the honey for another sticky sweetener of choice; I like either agave or maple syrup for this. I’ve also discovered that this works particularly well when served with my new favourite nut milk: hazelnut milk. The granola flavours really infuse into the milk to create this super sweet, nutty, incredible concoction! Seriously though, you need to give this one a try!

Ingredients

  • 2 cups jumbo Oats
  • 1/4 cup sunflower seeds
  • 1/4 cup flaked almonds
  • 3 heaped tbsp Pic’s Almond Butter
  • 3 Tbsp honey/maple syrup/agave
  • Pinch sea salt

Method

Preheat the oven to 180c and line a tray with baking paper. 

In a saucepan, gently melt together the almond butter and sicks sweetener of choice. 

Combine all of the dry ingredients in a mixing bowl and toss everything together. 

Pour over the almond butter mixture and stir everything so that all of the dry ingredients are fully coated. 

Spread this onto the baking tray and pop into the oven for 15 minutes, tossing half way to prevent burning. 

Store in an airtight container or jar and serve with your favourite fruits and plant based milk!
