Pumpkin Pie Porridge

As soon as Autumn arrives, this means one thing in my house.. pumpkins in every nook and cranny. Everyone who’s ever lived with me will know about this pumpkin obsession. I love cooking with them and using them in pretty much every recipe that I made throughout October. I also love decorating the apartment with various different coloured baby pumpkins and surrounding them with lots of cute fairy lights and candles.. ok maybe I’ve had a little too much spare time this weekend.

This porridge is possibly the most delicious bowl I’ve ever made, big statement I know.. (and I know I’ve probably said this about various different porridge recipes in the past as well.) I’ve been really getting back into my morning bowls of oatmeal now that the weather’s been a lot cooler; it’s definitely my favourite Autumn/Winter breakfast of choice! You could also add in a scoop of vegan vanilla protein powder, which is something that I love to do if I’m eating this pre or post workout.

This can be eaten hot, but also cold as an overnight oats kinda’ dish to take to work with you when you’re out and about on the go. The flavours are so festive and beautifully spiced- for me this is literally the epitome of Autumn!

Ingredients

  • 1/2 cup porridge oats
  • 1 cup Sproud Pea Milk
  • 1/2 cup water
  • 2 tbsp pumpkin puree
  • 1/4 tsp ground cinnamon
  • Pinch ground ginger
  • Pinch ground nutmeg
  • Tbsp honey
  • Toppings of choice

Method

Start by combining the oats with half of the milk and water in a saucepan and bring to a medium heat.

Add in the spices and cook until the oats have started to thicken. Pour in the rest of the milk and stir through the pumpkin puree and honey.

Once the porridge is cooked, serve in your favourite bowl and add all of the toppings!
