Goji Berry & Rose Chocolate Fudge Bark

Surprise.. it’s another Valentine’s themed recipe! I don’t know what’s come over me this year, but I’m just really getting into this Valentine’s cooking theme! I think it’s mainly because I love making pink food and making everything look super girly and pretty with an excessive amount of rose petals (nothing new there then!)

This year will actually be my first Valentine’s Day since the age of 16 that I’m not in a relationship! This isn’t something that I’ve ever spoken about on here or my social media accounts and not something that I’m going to touch on just yet.. but maybe one day, who knows! Anyway.. point being, I would have thought that being single on Valentine’s Day would have turned me into a bit of a humbug and definitely not someone who’s practically skipping around making every pink item of food they could possibly think of haha.

I have always been a fan of making themed recipes though! I love all of the celebratory times of the year; Christmas, easter, New Years, halloween.. love em’ all! I know the recipes are then kinda’ exclusive to that time of year, but I find cooking to a theme quite motivating and it challenges me to make things that might be little out of my comfort zone normally.

Anyway, going off on a bit of a tangent there as per. Let’s talk about this chocolate bark. When I think about it, making my own raw chocolate was actually one of the first things that I ever made and it’s surprisingly so quick and easy to do at home. This is more of a softer chocolate texture.. kinda like a fudge, as I’ve added in a generous helping of peanut butter, which also gives you that delicious undertone of peanut flavour!

This makes a really cute Valentine’s snack or home made gift, whether you’re planning a romantic evening or having a cosy girls night in. I feel like anything pink and chocolatey is perfect for this occasion!

Ingredients

  • 130g dark chocolate
  • 4 Tbsp peanut butter
  • 2 tbsp sticky liquid sweetener
  • Heaped Tbsp Good Guru Good Berries
  • Handful Goji Berries
  • Sprinkling of rose petals

Method

  • Start by gently melting the chocolate in a Bain-marie (could also use a microwave)
  • Once the chocolate has melted, stir through the peanut butter and liquid sweetener of choice. I like either honey, maple syrup or agave for this.
  • Mix in the berry powder and goji berries, then pour the mixture onto a lined tray and spread evenly. Sprinkle over the rose petals, then pop this into the freezer for a couple of hours to chill.
  • Once set, break into pieces and enjoy!
