Easy Cinnamon Banana Blender Pancakes

I think I need to just straight up address this now.. my recipe content on here has been serverly lacking over the past month and I just don’t really know why. Actually, that’s to true, I can probably explain why right now. I’ve been working really hard to get everything done on time and keep on top of all of my client work (which has been going really well). However, I do feel like I’ve been procrastinating on a lot of things and taking a lot more time for myself to just relax and get my head together. I’m not saying that this is a bad thing, probably quite the contarary; but for someone who’s always been somewhat of a manic workaholic, it makes me feel a little bit uncomfortable.

I don’t know whether it’s the fact I run my own business or perhaps being amongst the busy London lifestyle, but I just feel like I constantly have a million and one things that I want to get done and I’m forever writing to-do lists as long as my arm. So, you might be wondering why I’m even telling you all of this? I guess because when you see what I’m doing on social media and people are commenting about how productive I am and manage to achieve so much with my day- I just wanted to be transparent and share that not only is this not always the case, but it’s definitely not something that comes easily to me.

I’m not a huge planner and 99% of the time I’m really rather disorganised and am without a doubt late for pretty much anything I have to attend (insert public apology to all of my friends and anyone who’s had to meet up with me ever here). I think we view other people’s lives, accomplishments and success and naturally are drawn to compare this with ourselves. I know that more often than not, I feel inferior to other people I see on social media or don’t feel like I’ve been working hard enough. I mean, maybe I haven’t.. maybe I could and should be doing more. BUT, there’s always tomorrow.. or the rest of today. Just because you might not be exactly where you want to be right now doesn’t mean you haven’t been working towards it or making progress. I always try and tell myself that as long as I AM moving forwards, it doesn’t always matter about the speed. Anyway.. that turned into a little bit of an essay haha. I went from not really having any inspiration to write anything, to having far to much to say in the time I had to write this! I’ll leave you guys with the recipe and some actual chat about the food now.

Pancakes would typically be a breakfast for a more leisurely weekend morning when I have more time, but these are super quick and simple to whizz up in a blender and if you have a large frying pan, you can have several cooking on the go at the same time. I think of these as one of my ‘store cupboard’ recipes because most of the ingredients are staple things that I would nearly always have to hand. I love recipes like this because it means that I don’t need to venture out to the supermarket to acquire a whole list of weird and wonderful ingredients!

It’s been a little while since I made pancakes actually.. since I went on the pancake making rampage around pancake day and I literally filled my Instagram feed with various different pancake varieties. I love making pancakes because it’s so easy to get creative and customise different flavours; but also because I love to decorate and style them for shooting! I’ve kept things fairly simple with the flavours ad toppings, but the combination of sweet banana pancakes, melted chocolate and strawberries is always a winner!

Ingredients- Serves 2-3 people

  • 1 1/2 ripe bananas
  • 2 eggs
  • 1 cup oats
  • 1 cup almond milk
  • Tsp baking powder
  • 1/2 tsp cinnamon
  • Coconut oil for cooking
  • Pinch sea salt
  • Toppings of choice- I’ve used melted dark chocolate and fresh fruit

Method

In a blender, combine the banana, milk, eggs, oats, baking powder, salt and cinnamon and blitz to form a smooth batter.

Heat a tsp of coconut oil in a non-stick frying pan over medium-high heat.

Once the pan is nice and hot, pour in a little of the pancake mixture and cook until bubbles start to appear on the surface, then flip and cook on the other side.

Repeat this for the remaining mixture.

Stack your pancakes and garnish with all of your favourite toppings before getting stuck in!
