Easy Chocolate & Blueberry Protein Pancakes

Protein pancakes are just a fairly quick and simple way to jazz up your average protein porridge or overnight oats and turn them into something slightly more indulgent and decadent, with the addition of a few little extra ingredients! They’re great for a healthy, yet rather delicious weekend brunch, sweet afternoon snack or even a dessert option. They don’t take long to make (at all!), they’re sweet, a source of protein, great for sharing and taste pretty much like regular pancakes! Plus, you can layer them with lots of fresh fruit and all of your favourite other toppings. After all, like I always say when it comes to things like this, smoothie bowls and porridge; it is really, all about those toppings!

Honestly there’s really nothing fancy about this recipe or flavour combo here. I’ve kept things classically simple and gone for the fail safe protein flavour, which is of course; chocolate. Top tip here guys.. if you’re ever mulling over a choice of protein flavours (especially when trying a new brand), I would almost always opt for a chocolatey flavour because I genuinely find these to be the most pleasant tasting across a wide spectrum of brands.

I will admit, a lot of fancy, sweet, innovative flavours can sometimes be hit and miss. Chocolate however.. you usually can’t go too far wrong! In case you’re wondering, the protein that I’ve used in this particular recipe is from Grenade– which I do really like and I’m a huge fan of lots of their products. The bars in particular- DELICIOUS.

Ingredients

Method

In a bowl, mash the banana with the back of a fork until almost smooth. Beat in the eggs one at a time.

Fold through the dry ingredients, leaving out the blueberries, then heat a little coconut oil in a frying pan and bring to a medium heat.

Add a generous spoonful of the pancake batter and a few blueberries and cook until bubbles start to appear on the surface, then flip and cook on the other side. Repeat this for the remaining mixture.

Stack your pancakes and serve with your favourite toppings.
