Creamy Vanilla Peanut Butter Overnight Oats

I’ve always been a big fan of my porridge, whether that’s for breakfast, lunch, dinner or snacks. It’s such a quick, easy and affordable meal to make, that’s ideal for any time of day. It’s my favourite pre workout meal because I just feel like it always leaves me feeling satisfied and full of energy ready to train. Oats are a good source of slow releasing carbohydrates and fibre, as well as being really versatile to use in so many different kinds of recipes. They’re without a doubt, something that I always have fully stocked in my cupboard. Speaking of which, I’m so impressed with my new kitchen organisation that I’ve got going on. Everything’s sorted neatly into sections and then into pretty jars! I do still need to label them however, which can be a job for next week! In case you couldn’t tell, I’m ever so slightly obsessed with my interiors and kitchen organisation. I actually find setting up a new home so much fun!

This dish is a great balance of protein, healthy fats and carbohydrates. I’ve added a vanilla protein powder here as the source of protein and you can use either vanilla whey or a vegan protein.. whichever you would prefer. The addition of the peanut butter not only adds a delicious hint of nutty flavour, but also helps to make the oats super creamy and luxurious!

Overnight oats are the ideal breakfast to prep the night before, so that you’re all ready to dash out of the door in the morning. They’re easy to eat at your desk and also transport to work with you in a jar or container. I feel like these are the perfect alternative to hot porridge for the Summer months, when you’re fancying something more chilled and refreshing. I don’t think even I enjoy having steaming hot oats on a hot summer’s morning.

Ingredients

  • 1/2 cup jumbo oats
  • 1/2 cup plant based milk- I used oat
  • 1 scoop vanilla protein powder
  • Heaped tsp Pic’s Peanut butter
  • Toppings of choice

Method

In a bowl, combine the oats, milk and protein powder and mix well until fully combined. Stir through the peanut butter and pop this into the fridge for an hour or overnight.

When you’re ready to serve, add all of your favourite toppings- I love fresh berries, nut butters, coconut chips and jam!
