Chocolate, Orange & Berry Spiced Bites

I made two different kinds of energy bites this week, both very different and both turned out so delicious. These are the perfect thing to make for those times when you really fancy something sweet, but don’t want to spend ages making something fancy that requires a lot of time and concentration. The concept of energy bites is pretty much: throw everything into a food processor and blitz it all up until it sticks together.

You can pack them full of nutritious ingredients and superfood powders and pretty much let your creativity run wild and experiment with a whole host of different flavour combinations. They’re also super handy for speedy on the go snacking because they’re easy to carry around with you in a tuppaware box and won’t be one of those snacks that you spill half down yourself whilst rushing for the bus.

These ones are so many of my favourite festive inspired flavours all combined into one.. but be aware, they’re so moreish! Standing in front of a pate of these, drizzled in melted chocolate for an hour and not devouring the whole plate was definitely a challenge. Chocolate and orange is one of my favourite choccy flavour combinations of the moment and the addition of the berry powder gives it that extra, slightly tangy, fruity kick.

If you so wished, you could also make these into protein truffles by adding a scoop or two of vegan protein powder and then a little extra sweetener or nut butter to insure everything binds together. Despite being an indulgent sweet treat, these are also packed with healthy fats and nutrients from the selection of incredible plant based ingredients. Things like this are especially ideal if you’re trying to encourage kids to eat more things like nuts and seeds because you really wouldn’t guess that’s what they’re made from!

Ingredients

  • 1/2 cup oats
  • 1/2 cup coconut chips
  • 1/2 cup cashew nuts
  • 5 tbsp raw cacao powder
  • 2 tbsp smooth almond butter
  • 2 tbsp agave syrup
  • Tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 cup pitted dates
  • Juice and zest from 1 tangerine
  • Tbsp Good Guru Good berries
  • Dark Chocolate for drizzling

Method

Add the nuts, oats and coconut into a food processor and blend until lightly crushed. Pour in the rest of the ingredients and give everything a good blitz so that you’re left with a sticky mixture that can be pressed together.

Roll this into balls and pop these onto a tray lined with parchment, then into the fridge for a couple of hours to chill.

Drizzle with some melted chocolate to garnish and enjoy snacking!
