Blueberry Cinnamon Oat Pancakes

Pancakes are one of my favourite weekend breakfasts to make when I have a bit more time. I know it seems like a bit of a faff, but they’re actually super quick and simple to throw together and you can make large batches to share with friends and family.

I love serving up pancakes with a variety of different toppings so everyone can pick and chose what they want. I’ve recently realised that I absolutely love cooking for people and hosting dinners. I just love making food for people and creating an environment where people can be happy and enjoy spending time in each others company. I’ve recently been thinking about how important socialising and making time for friends and family really is. If I’m feeling down or just in a it of a bad mood, spending time with people I love always makes me feel more energetic and positive.

I also think eating with other people and having someone to share food with just makes meal times so much more enjoyable. How we eat and enjoy our food is also important and not just what we’re eating. If you’re quickly eating a meal whilst watching tv and not really paying attention to your food, then you’re probably not really taking the time to acknowledge what you’re eating, how you feel, when you’re full or just how your body feels. It’s so easy to just mindlessly eat meals whilst focusing on other things and this is something that I’m really trying to work on. I have become someone who would regularly eat whilst working on my computer or scrolling through my phone and I was to try and reduce these distractions during meal times.

These pancakes are possibly one of my simplest pancake recipes yet and most of the ingredients are things that you will likely have lying around the kitchen already. I love using oats in place of flours because they’re super affordable and convenient.. and something that I always have jars and jars full of in the house. They also add a bit of a different texture and are a great source of slow releasing carbs and fibre. Bananas are another key staple for pancake making for me because they help to add moisture to the recipe, without needing oil and also have a wonderful hint of natural sweetness!

I wanted to create a slightly different flavour combination to that of my regular oat pancakes, so here we’ve opted for a delicious blueberry and cinnamon combo. I’m so obsessed with cinnamon right now and I think it works perfectly not we’re approaching the Easter period!

Ingredients

  • 1 cup oats
  • 1 ripe banana
  • 2 whole eggs
  • Tsp baking powder
  • Pinch sea salt
  • Pinch cinnamon
  • Tsp Arctic Berries Blueberry powder
  • Coconut oil for cooking

Method

Mash the banana with the back of a fork, then beat in the egg. 

In a bowl, combine the dry ingredients and mix everything together.

Fold through the wet mixture and continue to stir until everything is well combined. 

Heat a little coconut oil in a frying pan over medium heat. 

Once the pan is nice and hot, add a little of the pancake mixture and cook until bubble start to appear on the surface, then flip and cook on the other side. 

Repeat this with the remaining mixture. 

Stack your pancakes and add your favourite toppings! Here I’ve added caramelised banana- so delicious!
