Autumn Spice Caramel Apple Bars

It’s finally time to share the recipe for these caramel apple pie/crumble bars YAY! Made these babies twice last week and wanted to dive straight into the tray both times! Apples are in season at the moment here in the UK and with so many delicious varieties flooding the shelves, it would be a shame not to make the most of them. Apple crumble is one of my go-to quick and easy desserts to throw into the oven when I’m hosting dinners.. and it’s such a simple thing to jazz up and customise with different spices & extra ingredients like coconut, chocolate, nuts or dried fruit.

Another one of my favourite parts of this recipe is that oozing caramel sauce. The combination of this, the crispy topping and warm, gooey spiced apples is just heavenly! These are basically like an upgraded, portable version of apple crumble. I mean, what could be better than that really?

They’re the perfect festive dessert for this time of year and are definitely giving me all of the Autumn feels. I love the smell of all of the warming winter spices and yes, I’m already starting to think about how I’m going to decorate the house for Christmas and all of the decadent treats I’ll be cooking up! There’s no such thing as prepping for Christmas too early in my opinion (despite what my friends and boyfriend think about this.)

Ingredients

  • 1 1/2 cup oats
  • Tbsp honey
  • 2 heaped Tbsp vegan butter or coconut oil
  • Pinch salt
  • 3 apples
  • Tsp vegan butter
  • 1/2 tsp cinnamon
  • Tbsp honey
  • Pinch ground ginger
  • 2 Tbsp Pic’s smooth cashew butter
  • Heaped Tbsp honey
  • Almond milk
  • Pinch sea salt
  • 1/2 cup oats
  • Heaped tsp vegan butter
  • Heaped tsp honey

Method

Preheat the oven to 180c and line a tray with baking paper.

To make the base, in a food processor, blitz the oats to form a fine flour. Then, add in the honey, coconut oil and salt and blend until well combined and is almost dough like.

Transfer this into your baking dish and firmly press down the create a smooth base. Pop this into the oven for around 6 minutes to bake, until lightly golden.

Meanwhile, dice the apples into small cubes and place these into a saucepan with the butter and spices and bring to a medium heat.

Cook until soft and caramelised, then stir through the honey. Stir together the cashew butter, honey, salt and gradually drizzle in the milk to create a smooth, pourable mixture. For the crumble, blend together the oats, vegan butter and honey in a food processor to make a crumbly mixture.

Spread the apples over the base, then top with caramel sauce and then crumble mixture. Bake these in the oven for 10-15 minutes so that the top is beautifully golden and crisp.

Allow to cool, then slice into portions and enjoy!
