Vegan Chocolate Waffles

I did a recent poll over on my Instagram so see whether you guys would prefer to see some vegan brownies or waffles.. the vote was pretty close.. so I thought I would just make both! I’ve been feeling a little bit down recently and just wanting to stay in bed all day. This is literally the furthest thing from what I’m usually like- I’m that person who’s jumping out of bed at 6am without any need for an alarm! I don’t know whether it’s because of the weather or maybe I’m getting ill? Anyway, the point of me mentioning this is that I wanted to say.. you shouldn’t let times like this get you down. It’s very easy to stay curled up in bed (especially when you work from home) and feel sorry for yourself, but just because you’re having a bad day, doesn’t mean that it needs to be a complete write off. This is something that I definitely used to do and I would just put everything off until I was feeling better.. BUT now I’ve decided that there’s no need to let the bad times define me and stop doing things that I want to do! Today is a day for a new recipe upload, so that’s exactly what I’m going to do! 

Speaking of which, vegan waffles are something that I’ve always found really tricky to master the correct texture. I find it a lot harder to get that crisp outer layer and then nice fluffy inside.. but not too soggy. That is something which I’ve experienced in the past with vegan waffles, the insides can sometimes end up being too squishy and soggy.. not really what you want! So it’s been a lot of trial and error with this one, but I think I’ve finally mastered it! These waffles are soft, chocolatey and nicely crisp on the outside! They’re also super easy to make too.. which is something that everyone’s looking for in the morning! They would also make for a delicious dessert or sweet afternoon snack as well! 

Seeing as these are completely plant based and don’t use any egg, to replace this, I find that the best replacement has been  the combination of banana, plant based milk and coconut oil. I’m no scientist and can;’t really explain which one of these in which quantities has helped me to achieve the desired waffle texture.. but it seems to have done the trick none the less! These are also gluten and refined sugar free, as I’ve used a gluten free flour blend, but feel free to experiment with your favourite types of flour or whatever you have in the kitchen. (Coconut flour however will not work with this)
