Pineapple & Coconut Energy Bites

I haven’t made energy bites for the longest time, so I thought it was time that ought to be rectified. These are slightly different from anything we’ve made previously; I feel like my classic go to flavours are typically chocolate and caramel based. These are really fresh and fruity, so perfect for summer snacking on the go. The inspiration has slight Pina colada vibes with the combination of the pineapple, lime and then of course, coconut! They’re sweet, fruity, chewy and crunchy all at the same time! 

 

One of the things that I like about making energy bites is just how simple and fuss free they are. You basically just have to throw everything together in a food processor, whiz it all up and then mush it into little balls. You can be really rustic with this too, they don’t have to look at pretty or even be identical in size. As long as they hold together and taste good, then I’m on board! They make for a super convenient snack to take out and about on the go with you and you can prep some at the start of the week to store in the fridge for delicious snacking all week long! 

I feel like energy bites/balls have started to get a bit of a bad rep recently for not actually tasting all that nice and being one of those classic ‘wellness’ foods. I do hear what you’re saying, there are lots of different foods that people have been munching on for the last couple of years purely in the name of health that they probability don’t really enjoy. However, I don’t think that we should tarnish the awesome energy balls with the same brush because these are subjective to how they’re made and what ingredients you put in there. Fill them with lots of delicious, vibrant flavours and you won’t just be left with a pile of dry oats squashed with some dates. They’re also a really easy way for people to make their own home-made healthy snacks without having to be overly specific with ingredients or break the bank. Unless you want to follow an exact recipe (if so, then I would highly recommend this one) you can really get creative and use up whatever you have to hand in the cupboard! It’s always fun to experiment with different flavour combinations and come up with your own spins on a recipe and this kind is perfect for just that! 

Pineapple & Coconut Energy Bites

Ingredients

  • 1/2 cup pitted dates
  • 1/2 cup cashews 
  • 1/2 cup oats
  • 1/2 cup desiccated coconut 
  • 1/2 cup dried pineapple 
  • Tbsp coconut oil 
  • Squeeze of fresh lime 

Instructions

  • Add the oats and cashews into a food processor and blitz to form a crumb. 
  • Combine this with the remaining ingredients and blend until everything is well combined and sticks together. 
  • Roll into balls and pop them into the fridge for a few hours to chill.
