Miso carrot & butternut dip

 

I’ve recently partnered with the lovely people at Clearspring to come up with a miso inspired recipe featuring products from their wonderful range! I absolutely love miso paste; it really has the most incredible flavour and actually works well in both sweet and savoury dishes.. who would have known?! You can get a few different types of miso actually, but I think my favourite would definitely be the sweet white miso paste. The Clearspring one that I’ve used in this recipe is 100% the best tasting miso that I’ve ever had. It’s always been something that I’ve been fond of, but since trying this stuff, I can now say that I truly understand the hype around miso. It’s actually SO delicious and you can add it to such a wide range of dishes too! I love stirring it through some stir-fry veggies for a quick flavour boost, or spreading it over some fresh salmon fillets before roasting them in the oven. It also tastes incredible blended into dips and spreads like this one here! 

 

The sweetness from the carrot and butternut compliment the miso paste beautifully and blend together to create a really smooth and creamy dip. Here I’ve paired it with some rye bread soldiers, but you could always add it to a salad bowl, serve with some meat or dip in some crackers. It’s also a super simple dip to whip up and you only need a few basic ingredients. This is also a really affordable recipe, as the main ingredients are fresh veggies and you can get carrots and butternut squash from pretty much any supermarket. Miso paste is slightly harder to get hold of, but a little bit really does go a long way and I use it in such a wide variation of recipes, I really do get my money’s worth! 

Butternut squash is such an underrated vegetable in my opinion and is truly one of my favourites! I literally always have a butternut squash in the fridge and use them all the time in both my recipes and every day cooking. I say this about a lot of my ingredients, but they’re just so versatile.. but honestly, they really are! I love to roast a huge batch of squash at the beginning of the week and add into into stir-fries and salads. If you haven’t tried adding in roasted butternut squash into a stir-fry with a little tamari sauce, then oh my goodness, why not?! The salty flavour from the tamari creates the most amazing contrast with the gooey sweet butternut and stir-frying everything together helps it to caramelise and become so soft and delicious! Squash also makes a great base for sauces, soups and curries! I recently made a cheesy pasta recipe using pureed butternut as the key component for the sauce; which makes everything so creamy and also gets an extra portion of veggies into your meal too!
