Flax and almond butter chocolate truffles

If you’re unsure of what to buy a loved one this Valentines Day, why not give them an extra special gift this year and make them some home made chocolate truffles! Not just any old chocolate truffles either! One of the main ingredients in these is actually almond butter- which has an amazingly rich, nutty flavour and is a great source of healthy fats. It’s also super creamy and smooth, so creates a beautiful melt-in-the-mouth consistency!

These little treats are actually a powerhouse of healthy fats from the nut butter, cacao powder, flaxseed and coconut oil. That’s not to say that I wouldn’t still consider them a treat.. but I mean, it is Valentines Day and if that’s not the time to enjoy a little chocolate then when is? However, I probably won’t be making a batch of these for my boyfriend this Valentines because he scoffs the majority of my sweet treats and recipe creations 365 days of the year, so I don’t think he really needs any more! It is handy having someone to be chief recipe tester though I must admit! 

The almond butter I used here was actually flavoured with cinnamon, which added a extra dimension of flavour and gently hint of sweetness. It’s from a new brand that I was trying out called Jungle Butter.. and let me tell you, they make some seriously good nut butters! You need to get your hands on a jar or two of these!  You could always add cinnamon separately and some additional sweetener if you wanted to.  I’ve been loving using ground flax blends in my recipes lately, as they help to bind ingredients together, are a good source of healthy fats and fibre and have a really tasty nutty flavour to them. They’re also a great thing to use in baking as an egg substitute, if you’re looking to create a vegan alternative to cakes or other baked goods. 

Another great thing about this recipe is just how quick and simple they are to make. You’ll only need a few ingredients and it’s pretty much a one bowl job as well; so less washing up to worry about! Oh.. and there’s no cooking involved! I mean, does it really get much simpler than that?!

If you are going to give them as a gift, you can roll them in a selection of different toppings like i’ve done here and perhaps store them in a little box or cellophane wrapping with some ribbon! My favourite toppings would have to be desiccated coconut, cacao nibs and some crushed nuts; but you could use whatever you fancied.
