Berry Breakfast Ice-cream Bowl

I posted a little video clip of this recipe, last week I think it was.. so thought I would share the recipe on here for you guys as well. it’s such a quick and simple way to enjoy a super delicious and refreshing breakfast dish that’s packed full of fresh fruit.. perfect for Summer! Typically for breakfast, I like to choose something that isn’t too carbohydrate heavy and provides me with a source of protein to kickstart the day. If I’m not having eggs, I’ll try and go for a plant based protein source such as a protein smoothie/smoothie bowl or porridge. However, during the warmer months, porridge isn’t really what I’ve been feeling like and I’m just not sure that oats are really agreeing with me at the moment; as I find they tend to make me feel quite tired and sluggish sometimes. 

This is a super versatile dish that you can enjoy as a breakfast or dessert, as it’s really sweet and indulgent in flavour but actually only contains a few simple, wholesome ingredients. The recipe is also really quick and easy as well- you’ll just need to blitz everything together in a food processor and voila! Then you can proceed to add all the amazing, delicious toppings aka.. the best part of any breakfast bowl. I would definitely recommend fresh berries and peanut butter.. because, well peanut butter goes well with pretty much everything, am I right? 

Probably the best thing about this is 100% the texture! I don’t think that I’ve ever made a smoothie bowl with such a decadent, thick and creamy texture; it’s honestly just like ice cream! The secret to achieving this is using the frozen berries, as these are amazing for creating that thick texture in smoothies and nice-creams. Plus, its a great way to whip up a nice cold and refreshing dish, even if you don’t have any ice made. This is another of the recipes that I’ve made using the One Earth Blends powders- which I’m sure you all know that I’ve been loving at the moment. For this berry ice cream, I opted for the Rejuvenate Your Soul blend, as I tend to use this one for more fresh & fruity dishes and save the Coco Gojo & Chocolate Dream for the chocolatey ones! So anyway.. let’s get onto the recipe shall we!
