Watermelon & coconut water coolers

I can’t actually believe it, but as I’m writing this, today is the first of July! It’s actually July already! How did this happen?! It seems like only yesterday that I was talking about Christmas! And.. more to the point, where’s all of the glorious July sunshine got to? Just in case we do get some, I thought i’d whip up some fresh and fruity drinks that would be perfect to serve to friends at a BBQ or enjoy whilst relaxing on a sun lounger in the garden.. if only that was the case right now eh?

Not only are these a delicious and refreshing addition to a sunny afternoon, but also packed with vitamins from fresh fruit and electrolytes from the coconut water to help you stay well hydrated in the warmer weather. Watermelon isn’t an ingredient that I use very often, so I think it’d actually forgotten just how delicious it can be! The combination of the super sweet flavours of the melon, paired with the vibrant fruity tang of the raspberries and lime is just an absolutely heavenly flavour explosion! Plus, it creates this stunning pink colour too.. and who wouldn’t want a drink that was naturally bright pink? 

I decided to get a little bit fancy with my presentation here too and give them a kind of cocktail like vibe by doing the whole sugared glass thing.. but used xylitol instead of sugar. I’m not sure that I’ve really done it justice as it was my first time giving it a go.. but I think it looks quite cool? Basically, you need to take your glass and dip the rim into some water and then into the xylitol and in theory.. it should stick and created a frosty look. Mine are by no means perfect here!
