Pink smoothie pots

Seeing as it’s Valentines weekend, the colour pink is a bit of a running theme at the moment. Luckily, lots of delicious foods happen to be pink or red, including one of my favourite fruits.. strawberries! These pink smoothie posts make for a delicious valentines breakfast treat and can be topped with whatever tasty treats you like.

Not only do these look pretty, but they’re also really quick to rustle up, so you won’t need to spend hours in the kitchen in order to put on a beautiful breakfast spread for a loved one. The texture is slightly thicker than a normal smoothie, so is more of a smoothie bowl and goes amazingly thick and creamy when left in the fridge overnight. It also creates a beautiful base for an array of toppings such as: berries, coconut, raw chocolate or some home made granola.

I love to serve these in small jars- it looks really cute and also means they can easily be taken with you for a quick, delicious breakfast on the go.

Ingredients:

1 banana

1 handful of frozen raspberries

4 large strawberries

1/3-1/2 cup filtered water

1 tbsp cashew butter

Toppings of your choice

Method:

1. Add all of the above ingredients into your blender and blend until smooth and creamy. Add more water if needed.

2. Pour into a jar and top with toppings of your choice. My favourites are granola, berries and coconut!
