Raw Cashew, coconut and vanilla butter

I don’t even need to begin to explain how much I love making my own nut butters, as this is something that I’ve mentioned on here time and time again. I think every time that I experiment with a new flavour, I instantly fall in love and insist that it’s my favourite one yet.. but this one really is my favourite flavour ever! .. and coming from a self confessed nut butter addict, I would say that’s really saying something. You’re probably wondering what makes this one any better from the other flavours and if it’s even all that different? Well..

First of all, this one is raw, so the nuts haven’t been roasted prior to being blended into the nut butter, which provides a slightly different flavour- but you could always roast them first if you would prefer. It also has the gorgeous creamy flavours of vanilla and coconut running through it, which are two of the best flavour combinations ever, in my opinion. These also make it taste slightly sweet, although there are no sweeteners used in this recipe what-so-ever! Speaking of vanilla, vanilla powder is possibly one of my most loved ingredients of the current moment- I’ve literally been attempting to add it to about 80% of my recipes. It can be pretty expensive, but for the flavour it provides, I think it’s worth the investment and it’s completely natural with no other ingredients added (This one that I use is anyway). This is absolutely delicious swirled over or mixed into porridge and also tastes amazing in smoothies too! It provides such an incredible rich and nutty, yet mildly sweet flavour and really helps to transform any snack or meal.

Nut butters are one of my go-to staples when it comes to healthy eating, as they’re a great source of plant protein and healthy fats and I find that they really help to keep sweet cravings at bay. You can also add them to so such a wide variety of different dishes, both sweet and savoury.. or simply eat it from the spoon straight outta’ the jar! Yum!


 

Ingredients:

1 1/2 cups cashew nuts

1/2 cup desiccated coconut

1 tsp vanilla powder

Method:

Combine the nuts and coconut in a food processor and blend until completely smooth. This may take a little while, so you could make a nice cuppa’ tea. (I use a Magimix for this and it works really well.)

Add in the vanilla powder and blend again. Transfer the nut butter into an airtight jar/ container.
