Broccoli & coconut soup with Coconut Merchant

After going a little crazy with recipes and blogging, I decided to take a step back for a while to not only focus on myself, but also to make sure that my content was of a quality that I was completely happy with. I think sometimes when you’re so passionate about something, it can be quite easy to get a little carried away; and I was trying to produce such a large amount of content for the blog, that I felt like the quality of my posts were not as good as I would have liked them to be. After taking a short break from social media, I am now back feeling very motivated and inspired to create some delicious recipes and really move forward with the blog.

I’ve mentioned previously that I absolutely love making my own soups for quick and nourishing lunch and dinner dishes and this creamy broccoli and coconut soup is now a firm favourite of mine! For me, broccoli is basically the ultimate vegetable; it’s so delicious (I think so anyway) and is absolutely bursting with micronutrients! The addition of coconut milk in this recipe makes the soup really creamy without having to use any actual cream! You also get a beautifully subtle hint of coconut running though the soup as well.. and if you love coconut as much as I do, then you’ll probably appreciate this!

Speaking of coconut, I’ve recently been working alongside a wonderful brand called Coconut Merchant, who make all kinds of coconut based products such as: coconut sugar, oil, flour, milk and even coconut jam! They very kindly sent me lots of their amazing products to experiment with and this is one of the recipes that I’ve come up with (lots more to come soon!). It still amazes me that there are so many things that you can create with coconut that I would never have even imagined using it in! A few years ago, I don’t think that I would ever have considered that coconut milk could act as a dairy cream substitute.. and taste even more yummy!

This soup makes a fantastic light meal or starter and is absolutely packed with fibre filled greens to really nourish your body and get you glowing. I love sitting down to a meal, knowing that it’s really going to benefit my body and fill it with the vitamins it needs.


Serves 2

Ingredients:

1 whole head of broccoli

1/2 cup coconut merchant coconut milk

1 small brown onion

2 garlic cloves

300ml vegetable stock

Salt and pepper

 

Method

Start by dicing your onion and sauté this in a pan, along with the crushed garlic cloves until the onion becomes translucent.

Chop the broccoli into small pieces and add this to the pan. Cook until tender and vibrant in colour.

Once your broccoli is completely cooked, combine all of the ingredients in a high speed blender with the coconut milk, stock and salt and pepper to taste. Blend until smooth. If you’d like your soup to be a little thinner, then you can always add in more stock.
